This Easy Stuffed Green Pepper Soup recipe is just what you need to whip up an EASY, warm, nourishing meal this fall. Or really any time, if you’re like me and love to eat soup year-round!
Ground beef is usually a pretty inexpensive choice in the meat-case at the store. It’s also something that freezes well, so if you see a good sale, buy in bulk! If you want to make something out of the norm (at least at our house!) from the usual spaghetti, lasagna, tacos, enchiladas, or chili to use up that ground beef, this soup is a great option!
I love stuffed peppers, but I find them messy and too time-consuming to make very often. Plus, they are not my kids’ favorite. But this soup is so easy to make, and my kids and husband love it! And you know me–any time I can have my slow cooker make a meal for me, it’s a win in my book!

By using lean ground beef to make this meal, you are not only getting high-quality protein for relatively low calories, but NINE other essential nutrients, like zinc, vitamins B6 and 12, and iron. And did you know that eating foods high in vitamin C help your body absorb iron from iron-rich foods? What are a couple of good sources of vitamin C? Tomatoes and green peppers!

Give this nourishing, nutrient-dense soup a try!
- 1 pound ground beef
- 1 onion, finely diced
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 (14.5oz) can diced tomatoes, or fire-roasted diced tomatoes
- 2 green peppers, chopped
- 1 (15oz) can tomato sauce
- 2 cans or approximately 4 cups beef broth
- 1 cup cooked brown rice
- Salt & Pepper to taste
- Toppings: shredded cheese, plain Greek yogurt/sour cream, hot sauce, etc.
- Brown the beef with the onion.
- Place in slow cooker with the rest of the ingredients.
- Cook on low 4-6 hours.
- You can also place browned beef and onions and the rest of the ingredients in a large soup pot and simmer for one hour.
