Pancakes are a breakfast favorite at our house, and these have become my go-to when the request is made on short-notice, or at 5:38am, like it was this morning. They meet my requirements of being fast, only needing ingredients that I almost always have on hand, and of course are kid-friendly. Bonus that they can be whipped up when you are barely awake.
The heart-healthy oatmeal helps the fullness factor, since it adds fiber and complex carbohydrates. And if you follow the 21 Day Fix Nutrition Plan like I do, one pancake counts as 1 yellow container. Simple!

Ingredients
- 1 1/2 c. old-fashioned oats
- 2 Tbsp. ground flaxseed
- 1 1/2 c. unsweetened almond or dairy milk
- 1/2 c. whole wheat flour
- 1 Tbsp. sugar or coconut sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt (optional)
- 1-2 tsp. cinnamon to taste
Instructions
- In large bowl, mix together the oats, flaxseed, and milk. Stir well and let sit for 10 minutes to soften the oats.
- Add the flour, sugar, baking powder, salt and cinnamon. Mix well until combined.
- Heat skillet or griddle over medium heat. Lightly grease with the coconut oil or cooking spray and pour some of the thick batter onto the griddle. Cook until the bottom looks golden brown, about 2 minutes. Flip and continue cooking the other side until the pancake looks golden brown all over, 1-2 minutes.
- Serve with pure maple syrup or a simple fruit sauce.
Notes
- Tip--the batter will be thick, but you can add a little extra milk to make it more "pourable."
