Today I got to write a guest post about one of my passions–meal planning! I am so excited for you all to check out an example of one of the meal plans in the rotation for my family. This is also one of the things I do to help my friends and clients–I make simple, balanced meal plans that are easy to prep, delicious, and can be tweaked to meet your specific nutrition goals.
This week has a couple of my favorite meals–Chicken Chowder and the EASIEST breakfast, Overnight Peanut Butter Oats.
A few things that I would do on Sunday for this particular line-up of meals:
- Roast a whole chicken, using the method Here. While that’s in the oven, wrap some sweet potatoes in tinfoil and throw them in too!
- Wash and cut up my fruit and veggies and portion them out for the week so they are easy to grab for snacks.
- Wash and chop the veggies for the Shepherd’s Pie and Chicken Chowder and put them in separately labeled containers in the fridge.
- Wednesday night I will make the overnight oats for the next few day’s breakfasts.
As usual, my healthiest meal of the day, Shakeology, is versatile, delicious, and takes two minutes to make. It can be used as a meal in a pinch, but on most days I have it as a healthy snack. It has been a lifesaver for this busy mom! You can see I drink it every day to help meet my nutritional needs and keep me away from junk food.
