What are planned-over beefy nachos? Not only are they tasty and you’re going to want to try them ASAP, they’re a great way to use that left-over roast beef so it doesn’t go to waste!
You know what I mean–you make a delicious roast beef, but then the next day or the next day, no one is interested in it. Food waste is the worst (what a waste of the resources that went into raising that beef, and a waste of YOUR money), so “planned-overs” is the term we use when you intentionally have a new meal planned to use the leftovers from a previous meal.
One of my favorite examples of this is Crispy Cuban Shredded Beef. Or this one! Beef is so versatile though, so I developed this “recipe” for when you’re in the mood to just throw ingredients together that are easily customized to your family’s tastes.
Enter: Beefy Nachos!
This recipe is such a family and friend favorite that I included it in my eCookbook. Everyone loves nachos, right?! They’re hearty and are made with common ingredients that you likely have already, plus you can make them as spicy or as mild as you like! You can go crazy with toppings or keep it simple.
- 30 small wheat or corn tortillas
- Cooking spray
- Salt
- Leftover roast beef, shredded
- 1 can black beans
- Shredded Mexican cheese
- Avocado
- Fresh cilantro, chopped
- Salsa
- Sour cream or plain Greek yogurt
- Black olives
- Sliced jalapeños
- Stack tortillas 10 at a time, using a pizza-cutter, cut into quarters to make chips. Spread chips out in a single layer on 3-4 parchment paper covered baking sheets. Spray the chips lightly with cooking spray and sprinkle lightly with salt.
- Bake each baking sheet of ships in 400 degree oven for about 10 minutes. Turn the chips and bake another 10 minutes, watching closely so the chips don't over-brown or burn.
- Remove the chips from the oven and combine onto one baking sheet. Top the chips with the shredded beef, black beans, black olives if using, and shredded cheese.
- Return the baking sheet to the oven and bake until cheese is melted and starting to brown. Top with your favorite toppings and enjoy!
