With Spring-time in the air, and my asparagus growing abundantly in the garden, I love to make this simple, healthy salad for my family. I love it because it is easy to make, nutritious, kid-and-husband approved and is good hot or cold, making it ideal to prepare a huge bowl and eat it throughout the week.
I don’t know if you can technically call this a recipe, but this is how I make this awesome meal-in-itself salad. Feel free to customize it to your family’s liking.

Ingredients
- 1 box whole wheat penne pasta (or whatever kind you like)
- 3-4 boneless, skinless chicken breasts
- 1 bunch asparagus
- 1 small container grape tomatoes
- ½ small container Feta cheese
- 1 small jar capers (but if doing 21 Day Fix, omit b/c of the salt content)
- Olive oil
- Lemon Pepper
- Dash of lemon juice
- Garlic powder
Instructions
- Cook and drain the pasta according to directions.
- Cook and dice up chicken (I use steamer bags in the microwave when I am in a hurry).
- Steam or bake the asparagus, and cut into bite-size pieces.
- Cut grape tomatoes in half.
- Toss all ingredients together in large bowl with crumbled feta cheese, capers if using, maybe 3 Tbsp olive oil, a splash of lemon juice, and lemon pepper and garlic powder to taste.
- Adjust the olive oil to your liking.
- This obviously makes a HUGE bowl that we eat throughout the week because it is good cold too.
